First Choice Holidays are committed to the implementation of the highest standards of food safety in hotels. The First Choice ski programme consists of hotels and chalets throughout France, Austria and Italy, which are managed and staffed by personnel from the company.
The challenge
First Choice needed a company with the experience and knowledge to implement a comprehensive food safety management system in both their hotels and chalets, training staff and monitoring performance during the season.
The solution
sts-solutions, with previous knowledge of the ski programme, were an ideal partner to work with First Choice on providing a ‘tailored’ solution.
The first stage was to develop the monitoring forms for both hotels and chalets, with a simple poster to demonstrate critical control points and monitoring procedures.
Management was trained to Intermediate Food Safety standard, as well as comprehensive training on HACCP and the documented system developed for the company. Staff was then trained in basic food hygiene and the system.
Twice during the season audits were undertaken and support provided to management and staff.
Rewarding achievement
The project was awarded Excellence in Management Advisory Services at the European Annual Conference of the Foodservice Consultants Society International in Vienna in 2003, winning the award ahead of stiff competition from other consultants throughout Europe.
